2 lb mussels (907 g)
1 stalk lemongrass ,
2 tbsp olive oil (25 mL) or vegetabIe oil
1/2 cup thinly sliced shallots
3 cloves garlic minced
6 bird’s eye chili peppers , finely chopped
1 tbsp finely grated gingerroot (15 mL)
1/4 tsp pepper (1 mL)
3 tomatoes , peeled and chopped
3 cups water (750 mL)
1 tbsp fish sauce (15 mL)
2 cups lighltly packed spinach (500 mL)
2 tbsp lime juice(25 mL)
1/4 tsp salt 1/4 (1 mL)

Daragang Magayon is the heroine that appears in the legend of Mt. Mayon in Albay, Philippines. Her name means “beautiful lady” (“daraga” – “lady or maiden”; “magayon” – “beautiful”).
Basic legend
Daragang Magayon was the only daughter of the Makusog (strong), tribal chief of Rawis, whose mother died shortly after giving birth to her. Magayon grew up to be a very beautiful and sweet woman that struck the swains from faraway tribes who vied for her attention. But not one of these young men have captivated the heart of Magayon, not even the handsome but haughty Pagtuga (eruption). He is a hunter and the chief of the Iriga tribe. He gave fabulous gifts to Magayon and vied for her attention.

‘Miracle’ town’s claim to fame is carabao’s milk in caramel

MILAGROS, Masbate–Legend has it that Saint Peter walks on the beach of this quaint town 22 kilometers west of Masbate City and can be seen doing so on a clear day. This is why the place was named “Milagros,” the Spanish word for miracles.
But the creature that brought so much wonders here is not Saint Peter’s supposed favored animal—the rooster—but the carabao.
The carabao is the beast of burden for many of the town’s 44, 575 residents, many of whom are farmers although townsfolk subsist primarily on fishing in the Asid Gulf.
